Subin Mecheri brings significant experience in luxury hospitality and food and beverage operations, having led culinary teams across several renowned hotel brands.
Prior to this appointment, he served as Executive Chef at Taj Kumarakom Resort & Spa Kerala, where he was responsible for the property’s culinary operations and guest dining experiences.
Before joining IHCL, he spent more than five years with Accor, serving as Executive Chef at Novotel Chennai SIPCOT and earlier at ibis Kochi City Centre.
Diverse Culinary Leadership Background
His professional journey also includes a stint as Corporate Executive Chef at Imperial Kitchen & Cafe Alchemy, where he oversaw culinary operations and food concepts.
Over the years, Subin Mecheri has developed expertise in culinary leadership, menu innovation, kitchen operations, team development, and delivering guest-focused dining experiences across luxury hotels and restaurant businesses.
