At JW Marriott Goa, Tanvi Palshikar will lead the pastry division, overseeing dessert innovation, menu curation and team leadership across the resort’s culinary operations.
A Career Transition from Design to Pastry Arts
Tanvi Palshikar began her professional journey as an interior designer before transitioning into the culinary field. Her background in spatial design shaped her approach to pastry, influencing her focus on proportion, detail and visual composition.
She first gained recognition as a Cake Artist, creating customised edible designs inspired by sketches and conceptual art. Her early work established her as a creative professional capable of translating artistic concepts into structured pastry formats.

Growth Within Marriott International
Tanvi Palshikar entered the food and beverage sector with JW Marriott Pune, where she progressed from Chef de Partie to Junior Sous Chef and subsequently Pastry Sous Chef. During her tenure, she led pastry operations across multiple outlets including pastry shops, all-day dining brunches and large-format banquet functions serving over 2000 guests daily.
Her responsibilities included operational oversight, audit management, menu development, guest engagement and team mentoring. She played an integral role in maintaining quality standards and operational consistency within the pastry department.
Within Marriott International, Tanvi Palshikar was recognised as a Leading Lady Chef. She also completed a specialised Bakery & Pastry course through the Lavonne × Marriott collaboration, further strengthening her technical foundation.

Following her tenure at JW Marriott Pune, Tanvi Palshikar assumed a broader leadership position with a Pune-based hospitality group. In this role, she managed pastry operations for two restaurants and a B2B vertical. Her focus included dessert research and development, plating standards, training modules and cost control frameworks.
Her expertise spans cakes, pastries, entremets, petite gâteaux, chocolate work and bespoke celebration confections. She is recognised for structured menu planning, flavour pairing precision and custom confectionery design.

Tanvi Palshikar’s craft has received attention in national and regional media. Her fully edible ‘Paithani Saree’ cake, designed with intricate detailing and edible jewellery elements, was featured in leading regional publications in Pune.
