Sofitel Legend Metropole Hanoi will host Michelin-starred Chef Thibault Sombardier at its restaurant Le Beaulieu for a special edition of the ‘Rendez-vous’ dining series on March 27 and 28, 2026.
Return of ‘Rendez-vous’ dining series
Le Beaulieu marks the return of its ‘Rendez-vous’ dining series with a four-hands dinner format.
The series, first introduced in 2024, brings Michelin-recognised chefs to collaborate with the hotel’s culinary team to create exclusive dining experiences.

Chef collaboration and menu
Chef Thibault Sombardier will collaborate with Restaurant Anne’s Executive Chef Matthieu Pirola and Le Beaulieu’s Chef de Cuisine Charles Degrendele.
The chefs will present a six-course French fine dining menu over two evenings.
The menu reflects a shared approach to classical French techniques combined with modern ingredients and seasonal produce.
“This sophisticated culinary dialogue promises a gastronomic experience both accessible and profoundly evocative,” said Chef Charles Degrendele.
Pricing and reservations
The dinner is priced at VND 4,900,000++ per person. A wine pairing option is available at VND 7,200,000++.

Culinary legacy of Le Beaulieu
Le Beaulieu is recognised as one of Vietnam’s longest continuously operating restaurants, with a history spanning 125 years.
The restaurant serves classical French dishes such as lobster bisque and crêpes Suzette, alongside contemporary French cuisine with Vietnamese influences.
Chef Charles recently introduced a honey-inspired tasting menu featuring regional Vietnamese honeys paired with premium ingredients.
Property milestone
Sofitel Legend Metropole Hanoi marks its 125th anniversary this year. The hotel, which opened in 1901, will host a series of events to commemorate the milestone.
